“ Crystalized honey lasts for thousands of years” – people say. And there are undeniable testimonials for that. No one could invent a food with such a long sell-by date. But the flying pharmacists made it!

Some time after centrifugation, honey crystallizes. This is a normal process which does not effect on its gustative, nutritive, biological and curative qualities. When honey becomes saturated solution, it crystallizes. This state of saturation is obtained when the proportion of the total amount of saccharides is above 70% and the water is under 20%. Glucose in honey has the aptitude to crystallize. It is like a crystal embryo. Crystallization is also due to other reasons. Pollen grains, proteins, wax’ pieces, propolis, etc facilitate the process.
Temperature and humidity of the place where honey is stored also influence on this process. Honey in honey-combs crystallizes more difficult or it doesn’t crystallize at all.

We can avoid the process by shock warming and filtering but in this case we will injure the taste of the real honey. We can control this process without changing this wonderful natural product. One of the methods for “controlled” crystallization is the daily stirring of the fresh liquid honey until its crystallization. This way we obtain a creamy mass /with very small crystals/ which tastes very nice, it’s healthy and can be spread.

In the world creamy honey is much more preferred than the liquid one!
